So, I’m in this band.  We’re called Sellout and it’s a bunch of musicians that decided that the artistic integrity of playing original music doesn’t pay quite as well as playing cheesey covers from the 70s, 80s and 90s for drunk people.  It’s fantastic!

We get some really cool gigs, we’ve played at the Horny Toad at Lake Ozark on the same stage that the likes of Willie Nelson and Randy Travis (the only 2 I can think of right now) have graced as well.  But this weekend was pretty cool.  We opened for Jefferson Starship in Junction City, KS on Saturday night.  I personally had absolutely no clue who this band was until I heard them sound check.  They playing Jane, Sarah, and the tune from Mannequin!  Neat.

Next month, we get to play (another) wedding but this one is unpaid!!  We have really made it now!

Summer is difficult

So, I whined for a month about no one ever reading my blog, then as soon as I got comments, I stopped writing. Weird, huh? Summer is a difficult time for me as I am a sun worshiper and My laptop does not like going to the pool, so we spend more time apart. Before you ask, yes, I am going to post a recipe, but I have things to say first!!

I have found a new favorite restaurant. I am totally obsessed with this place and I eat there almost every day. I know, it’s an illness I think. It’s called the Mixx (mixxingitup.com) and it is perfect. I first learned of it through my trainer, because I was complaining that there aren’t enough healthy restaurants in KC that aren’t Vegan. I don’t like vegan, I’m a carnivore. The Mixx serves sandwiches, salads, soups, and a different pasta special every day. I haven’t tried the pasta, but if it is half as wonderful as the daily soup specials, it is great! Jo Marie Scaglia is the owner and mastermind and she has a unique vision of food. I have not had the honor of meeting her, but if I ever do, I am going to ask her for all of her recipes. If she won’t give me all of them, I am going to ask for her stone ground mustard vinaigrette recipe. I am not kidding you when I say that I am a salad dressing SNOB and this dressing is spectacular. It is very light and allows you to taste the flavors of the vegetables in the salad while enhancing the overall salad. I highly recommend the Main Street Chop Chop.

Okay, so your recipe….. This is a very simple recipe that I converted into a Weight Watcher’s- friendly. It is perfect for that busy Monday night when you have tap dance class and Boy doesn’t want to grill. I made it the night before so it could just be popped in the oven.

Baked Spaghetti

7oz Whole Wheat Spaghetti (Uncooked)

1 jar Light Spaghetti sauce

8oz fresh sliced mushrooms

1 small white onion chopped

1 pound ground turkey breast

2 cups Kraft 2% Mozzarella Cheese

2 cups water

Preheat oven to 325 degrees

Brown the ground turkey breast in a large sauce pot until no longer pink.

Add mushrooms and onions and cook for a minute longer

Pour in sauce and mix well

break spaghetti into 1-2 inch pieces and gently mix into the sauce along with the water

Pour the entire mixture into a greased (with Fat Free spray) 9×14 casserole and cover tightly with foil

Bake at 325 for about 90 minutes

6 servings

6 weight watcher’s points per serving!!

 

The boy has also mentioned that this is a really good drunk food. I’m very proud.

I have an idea.  Maybe someone will read my blog if I give them something.  I will write a recipe every now and again and then it will be worth it to both of us!  This is one of my favorites ever, I originally found it on Allrecipes.com and then added my own variations because I couldn’t follow a recipe if it saved my life.  I will even add the Weight Watcher’s point values because that is how I cook.  I have lost 25 pounds so far!!

Earth, Sea and Fire

This dish can be made with chicken, salmon, or really any meaty fish.

2 4oz Salmon Filets (Or whatever you choose)

1/2 Tbsp lemon juice, canned or bottled

1/2 cup roasted red peppers, Cut into Strips

2 small portobello mushroom(s)

2 cup red onion(s), Sliced into rings

butter-flavor cooking spray

3 medium cooked red potato(es), Thinly Sliced

Instructions:

Boil sliced potatoes until fork tender.
Coat bottom of square casserole dish with butter flavored cooking spray
Line the bottom of casserole dish with potatoes and add salt and pepper to taste.
Top with Red onions
Top red onions with roasted red pepper
Top with Salmon more salt and pepper to taste
top salmon with portobella mushroom and spray with butter flavored cooking spray and salt and pepper to taste.
Bake at 350 for 45 minutes

Driving into winter

I have been whining for 2 months because the winter is lasting far too long in Kansas City.  So spring came, sort of, and I am now bitching about the fact that it is ONLY 50-65 degrees outside.  I will not do that anymore, if I ever get home again.  I drove into another season today.  I am in beautiful Grand Forks, ND (100 miles south of Winipeg) and it is 30 degrees and is supposed to snow.  This is CRAP!  The sad thing is, the people up here are wandering around thinking it is FINALLY getting warm.  I feel like I should come up with some philanthropic activity I can do for these people to make up for all of the bitching I have been doing.  The boy at the front desk at this hotel (where I am NOT guest of the day) told me that they have 2 seasons here, winter, and July.  Adorable!  The best part about this trip is that, since I thought I was going to get to stop through home this week, I didn’t bring a coat so I had to go shopping.  Too bad.

I’m Guest of the Day!

So I get to my hotel last night and find that I am guest of the day!! This is such a beautiful surprise and I just don’t know what to say! For those of you that have not been the guest of the day at a $50 a night hotel, it is quite the thing. I get to park closer to the door, although the Employee of the Month was double parked today so I had to find elsewhere to store the driving box. That is not all, not even close! I also got a bag of microwave popcorn, a bottled water, 2 travel deodorants (one for men and one for women, watch out, Boy, you’re getting a present!) a travel shave cream, and a comb. I KNOW, can you believe this windfall? It is so wonderful, I feel like I should make a speech or something, although they get pretty annoyed with me when I ring the little bell on the desk.

So Sellout! played at the Jazzhaus in Lawrence this weekend. It was a pretty cool gig, except for my partner, the other singergirl, didn’t show. No, she didn’t call in sick (can you do that do a band?) no family emergency, just didn’t show. It was fine, it just annoys me and I thought you should know about it, Oh Loyal, though invisible reader. I actually got to sing a lot of her songs, so it worked out nicely for me, not to mention that we get to split her cut when she does work. That’s nice, dollars are fun! Anyway, the Friday night gig was pretty cool, but Saturday was totally insane. So packed that people had to stand packed on the dance floor during set breaks because there was literally nowhere else to go. I observed this from the dressing room because I’m a bitch and I don’t like it when drunk people touch me. I did manage to restrain myself though, when the falling down drunk, fighting with his friend only half jokingly, nearly unconscious 20 year old appraoched me to let me know that my boobies had a great show. Thanks dude.

I guess that is all. I have many, many things to say, but what will I write about for you tomorrow when you are still not here if I say everything today?

I have never been a runner, not unless chased- with a weapon. I took off today with my ipod on my arm, Boy’s running watch on my wrist, not actually positive what to do. I have been to a trainer once, a b-day present from Boy,and he told me that I need to do high intensity cardio for 30 minutes on the days that I don’t do resistance training. The problem is, I don’t know which to do more often. And then trainer is not so great in the calling back category . So whaddaya do? Well, I’ll tell you what I am going to do. I like the resistance training and I happen to hate the cardio, so I plan to walk with Boy as often as he’ll come with me and run once, MAYBE twice a week and the resistance every day besides running days and Sundays when I play soccer.

Here’s the crazy thing– I ran for 15 minutes straight, and I could’ve done more.  I guess I’m going to be a 2-3 day per week runner now and eventually I will write this blog about how annoying smoking in public is, and then I’ll vote Republican. JUST KIDDING! I’m not quitting thinking!!

One day, someone will read my blog. I have confidence in you!!! I am looking forward to your comments!! Even if your name is “Boy” I would like to know you’ve at least read my rantings!!

Hi! I am the singergirl, I’m a regional consultant for a donut company, the lead singer in a pop cover band, a fabulous dog mom, a terrible soccer player, a wannabe chef, a future skinny girl, The Mad Hat’s girlfriend and a girl struggling to quit the smoking. I miss cigarettes. I really liked them, we were good friends for a long time, but I heard a rumor that they are trying to kill me. BOOOOO to friends trying to murder me! I started taking Chantix 1 month ago today and I should be a nonsmoker by now, but I keep deciding that I can have “just one” and then have to start all over with the withdrawals. It’s pretty annoying, really. The cool thing is, I can take really deep breaths without coughing. Haven’t done that since high school! I am going to try to run today, I’ll update ya. I am also on weight watcher’s. So far I have lost 22.3 pounds, until last week when I gained 1. Stupid quitting smoking! I refuse to quit losing weight if it means starting smoking again. When I am at 30 pounds, my fabulous boy is going to take me to the beach! I’m planning on that trip being in late September, I know it shouldn’t take me that long to lose the final 7ish pounds, but I don’t want to go during the summer, so I have set my goal to maintain the weight loss and extend my tan into the fall! Smart, huh?
